先把鸡胗切成厚片,不要切太薄了,那样鸡胗水份容易流失,吃起来口感发柴

切好以后放到大碗里,加水抓洗一下,这样能洗掉血水,达到一个初步去腥的作用,换水多清洗几遍,洗至水变清澈就可以了。洗干净以后倒出控水,把里面的水分挤干一些

接下来腌制,加入葱姜、盐,胡椒粉,料酒去腥,放少量生抽,然后用力的抓一下,把葱姜里的汁水抓出来,这样去腥效果更好,鸡胗也能入味

接着往里面加入半个鸡蛋,一些玉米淀粉抓匀,鸡蛋可以让鸡胗吃起来更酥脆,淀粉可以封锁水分,这样吃起来更鲜嫩一些,抓匀以后腌制十五分钟

腌好以后挑去葱姜,四成油温散开下锅,下锅以后先不要搅动,让鸡胗定型,完全定型以后再用漏勺打散,大约炸两分钟鸡胗金黄酥脆就可以了,炸好以后捞出控油,感觉表面不够酥脆的,可以再复炸一次

锅留底油,先下入蒜沫炒香,在加入孜然粉、辣椒面和白芝麻,小火慢炒,炒出红油,注意控制火候不要炒糊了。接着把鸡胗下锅,快速的翻炒一下,让鸡胗能够裹满香辣孜然味。腌制的时候,盐味已经放够,调味只需要放少量白糖,加入小葱花,开大火快速炒匀,出锅前放一点香辣红油
