小鲫鱼炖汤怎么做好吃?教你做鲫鱼豆腐汤,汤白如牛奶,一点腥味都没有
用料:
鲫鱼,豆腐,葱,姜,盐,油,料酒。

做法:
平时不搞促销活动的时候,超市店员都会帮忙宰杀鲫鱼,不过今天只能自己洗了。
首先把鲫鱼鱼鳞刮掉,扣去鱼鳃,刨开鱼肚子,抠出里面的内脏,将鱼肚上的黑膜清洗干净,这样炖出来的鱼汤才不会腥。
在鲫鱼肚子上划上几刀,这样便于入味。将豆腐用刀切成小块。

热锅凉油,把处理干净的鲫鱼放入油锅中煎一下。

煎到鲫鱼一面表皮焦黄,给鱼翻面煎另外一面。

两面都煎好后,淋入一点料酒,把葱和姜放入锅内,用油稍微煎一煎,这样葱和姜的味道更香,既能去腥,又能起到增香的效果。

倒入适量的热水,尽量一次性将水倒足,烧的过程中不要再加水,盖上锅盖炖。

炖至鱼汤变白,倒入豆腐再煮2分钟,撒上适量的盐调味,即可出锅。
