面筋塞肉的肉馅怎么调 ,这样拌肉馅不干不柴,细嫩多汁
油面筋一包、猪肉糜350克。
先做葱姜水:将葱姜用热水泡10分钟左右,可以用手捏一捏。
将肉糜先加入盐顺着一个方向搅拌均匀,搅到肉有粘性了,加少许黄酒,搅到肉有胶质了,不粘碗,加入一勺蚝油、生抽、白胡椒粉搅拌均匀,最后分两次加葱姜水搅拌上劲,最后再加一点水搅拌均匀。
来塞面筋:将油面筋扣一个洞,里面的肉压扁,将调好的肉糜塞进去就可以了。
烧面筋:锅内倒少许油、下葱姜炒香,把面筋上进去放少许盐、老抽、末过面筋一半的水,大火煮开后中火煮10分钟,大火收汁,最后撒上葱花即可。
