【无面粉点心】手工杏仁饼干,没有面粉、泡打粉、奶类、油,超低糖又健康的手指食物!前阵子去逛菜市场,看到现磨的杏仁粉,心血来潮买回家泡给安安和乐乐喝,结果他们一点也不赏脸,平白辜负小编一番心意,原本想说得浪费了,脑筋一转,干脆做成饼干,当作手指食物,没想到两个宝贝超级喜欢,原本恼人的杏仁味道减轻不少,变得香醇可口呢!因为无面粉和奶类,所以过敏的宝宝也能安心享用喔。

<手工杏仁饼干>
材料:约2人份
1.鸡蛋一颗
2.砂糖5g
3.杏仁粉30g(可以换成芝麻粉、面粉...等等)

做法::
1.取一个干净无水、无油的容器,将蛋白和蛋黄分开。

2.蛋白加入砂糖,以打蛋器打发至呈现弯钩状。

3.将打散的蛋黄到入蛋白霜中,用刮刀用切拌方式轻轻拌匀(不要旋转式的搅拌)。

4.倒入过筛的杏仁粉,用切拌方式拌匀。

5.将杏仁糊到入干净的塑胶袋中,袋角剪一小洞。

<小烤箱版>
烤盘铺上烘焙纸,挤上杏仁糊。

放入小烤箱中,上下火全开,烤约八分钟即可(每台烤箱温度不同,请自行拿捏时间,勿烤焦即可)。若是用可调温度的大烤箱,建议用150度来烘烤,时间请自行掌握。

电锅不加任何水,直接按下煮饭开关。

电锅跳起后,请等待五分钟再开盖,将饼干翻面,再次按下开关烘烤,开关跳起即可取出食用。

因为低糖无油,烤好的饼干冷却后,如果没有马上吃完,请立即放入密封盒中保存,避免受潮变软。一旦回软,可以再次烘烤一下,就可以恢复香酥。建议三天内吃完为佳,夏天请记得放冷藏喔!
