调料准备:高度白酒、泡椒切成段、姜切片、花椒、盐、生抽酱油、胡椒粉、蒜苗。

童子鸡提前用白酒把鸡身烧一下,去绒毛,去腥,洗净,再砍成小块。

开大火,放入鸡块翻炒,沿锅边淋白酒一圈,再翻炒1分钟左右。
